Preheat the oven to 350° F. Line a rimmed baking sheet with a piece of parchment paper and set aside. In a large bowl, mix together the oats and almonds.
In a separate bowl, combine the melted coconut oil, syrup, vanilla & almond extract, cinnamon, and salt. Toss well and pour over the oats-almond mix, and coat evenly.
Spread the mixture on the prepared baking sheet and bake for 30 minutes, stirring halfway through. Give a good mixture, and bake for an additional 20 minutes until golden brown.
Remove and let it cool completely. Store the granola in an airtight container for up to 2 weeks. Top over your morning yogurt, or in a bowl with milk. No matter how you eat this, you'll love 'em!
