Preheat oven to 425°F, with oven rack in the middle. On a sheet pan, place a cooling rack directly on top of the sheet pan. Place chicken wings on the rack, putting space in between. Pat dry with a paper towel. The drier the wings, the better! Let them sit out while you work on the rub-sauce!
In a large mixing bowl, add the chipotle sauce, honey, zest of a lemon (save it since we'll use the juice for the bangin' sauce!), graded garlic clove, black pepper, salt, and mix. As you mix, drizzle about 1 to 2 tablespoons of extra-virgin olive oil.
Toss the chicken wings with the sauce until all are coated well. Return the sauced wings to the rack over the sheet pan. Sprinkle more salt (important to season the chicken really well with salt- don't be afraid!).

Remove the wings from the oven. Don't be alarmed if parts are charred- that's the sugar from the honey (and the best part!)! Let them rest for a few minutes, before digging in.
