Chipotle Chicken Wings with Bangin' Sauce
Ingredients
Wings
- 2-3 lbs Chicken wings
- 1 tbsp Olive oil
- 1 tbsp Honey
- 1 Lemon, zest
- 1 Garlic, clove minced
- Chipotle in adobo sauce
- 2 tbsp Kosher salt and cracked pepper
Bangin' Sauce
- ½ cup Sour cream
- 1 cup Feta
- ½ Lemon, juiced
- 1 Garlic, clove minced
- Kosher salt and cracked pepper
Instructions
- Preheat oven to 425°F, with oven rack in the middle. On a sheet pan, place a cooling rack directly on top of the sheet pan. Place chicken wings on the rack, putting space in between. Pat dry with a paper towel. The drier the wings, the better! Let them sit out while you work on the rub-sauce!
- In a large mixing bowl, add the chipotle sauce, honey, zest of a lemon (save it since we'll use the juice for the bangin' sauce!), graded garlic clove, black pepper, salt, and mix. As you mix, drizzle about 1 to 2 tablespoons of extra-virgin olive oil.
- Toss the chicken wings with the sauce until all are coated well. Return the sauced wings to the rack over the sheet pan. Sprinkle more salt (important to season the chicken really well with salt- don't be afraid!).
- Bake for 30 to 40 minutes.
Bangin' Sauce
- In a food processor, add the feta, sour cream, black pepper, half a lemon juice, and salt. Process until nice and smooth. Pour sauce into a dipping bowl, and crack fresh black pepper on top.
- Remove the wings from the oven. Don't be alarmed if parts are charred- that's the sugar from the honey (and the best part!)! Let them rest for a few minutes, before digging in.
- Place the Bangin' Sauce near these wings, and try not to have only one! VARIATIONS: You could grill these wings, but they are just as good cooked in the oven!
